Recipe: Dragon Fruit Bread

MANILA, Philippines — Thought you could only eat dragon fruit as it is or just add it to a cake, pastry or chilled dessert as a topping? Now, you can also use dragon fruit as an ingredient for bread.
Ask Chef Kris Edison Tan, the genius behind Masa Madre Bakehouse, and he will bake you an awesome dragon fruit bread. Combining it with California Raisins is a genius, which Chef Kris recently displayed when he conducted a baking demo for the Raisin Administrative Committee (RAC) at Bakery Fair 2025.
RAC is the body responsible for promoting California Raisins outside the United States, and the recipe that Chef Kris came up with for its baking demo was simply called California Raisins Dragon Fruit Bread.
California Raisins Dragon Fruit Bread
Ingredients:
230 grams California Raisins
1 kg. bread flour
12 grams salt
150 grams sugar
12 grams yeast
450 grams water
20 grams butter
120 grams dragon fruit
50 grams black sesame seeds
Procedure:
1. Soak California Raisins in rum overnight to boost flavor.
2. Keep all ingredients cold, except the yeast.
3. Combine all ingredients, except California Raisins. Final temperature of dough is 26°C.
4. Mix at low speed for 2 minutes, then at high speed for 6 minutes.
5. Add California Raisins and black sesame seeds, mixing on low for 30 seconds.
6. Let dough rest for 30 minutes. Cut into 100-gram portions, shape gently, and rest for 15 minutes.
7. Proof bread for about 1 hour at 27°C.
8. Preheat oven to 205°C (top) and 215°C (bottom). Bake for 18 minutes.
9. Let bread cool down for 15 minutes before serving.
Yield: 16 pieces.
