CCA Manila set to shine in Australia

MANILA, Philippines - The Philippines’ top culinary school, the Center for Culinary Arts (CCA Manila), is set to shine in Australia as they bring the best of Filipino cuisine down under. The CCA team will prominently participate in Melbourne’s Food and Wine Festival that will be held along the Yarra River on March 2 to 12.

Together with the Northcote Social Club Restaurant in Melbourne, CCA chefs and students will be preparing a traditional Filipino lunch buffet called “Filipino Barbie (barbecue)” which will include lechon and sisig, to name a few. The CCA team aims to elevate Filipino cuisine to a higher level and promote this culinary experience in Australia. Aligned with this purpose, CCA Manila also fostered a partnership with the William Angliss Institute, where CCA chefs will do a cooking demo of Filipino dishes. In return, instructors from William Angliss will teach the students how to brew delightful coffee concoctions and expose them to innovative techniques during their Coffee Class.

CCA Manila, the premier school for culinary education in the country, has already received many recognitions and awards. Its chef-instructors are now officially certified culinary professionals by the prestigious American Culinary Federation (ACF), the first batch of chefs in the Philippines to be conferred such by the largest and most prestigious culinary association in America.

ACF is the largest professional chefs’ organization in North America, with more than 22,000 members who belong to more than 225 chapters in four regions across the US.  Sanctioned by the Council on Higher Education for Accreditation, ACF is the only organization to accredit culinary arts, baking and pastry programs in the US.  The recent certification of some of CCA Manila’s chef instructors made the Philippines the only country outside the US (apart from Switzerland) to have the distinction of having the first US-certified chefs in the Philippines, where such a move also distinguished CCA Manila as an accredited ACF test site for certification in the country.
