MANILA, Philippines - Takeout is one of the most convenient inventions of humankind. The premise of paying someone to prepare your food and then take it home is genius. That is why almost every fast-food chain in the Philippines offers takeout service. Even fancy restaurants offer takeout so as not to contribute to food wastage and also for customers to take home a little piece of the restaurant with them.

Sargents Crispy Pata is one such place. A takeout counter in the heart of San Pedro, Laguna, Sargents Crispy Pata — or simply Sargents, to some — is a unique dining concept that is the brainchild of restaurant owner Jonathan Tan. It is a crispy pata takeout counter that also offers a variety of food to choose from.

“We came up with both the concept of a crispy pata store knowing that it is one of the favorite dishes of Filipinos. Cooking crispy pata takes a lot of time and preparation and we know how busy people are these days, which is the root of our inspiration in creating Sargents Crispy Pata,” explains Tan.

Sargents is not Tan’s first business venture. He started a business four years ago and Sargents is a form of expansion on that last business.

“We started with our pilot project, Mr. Bigg’s Inasal,” shares Tan. “Sargents is an entirely new concept, which makes it more challenging and exciting.”

What is exciting about Sargents is its specialization and focus on Filipino food. Not only do they serve food fast, hot and on the dot, their fare smells and tastes amazing as well. Another plus factor when dining at Sargents is the affordability. One would be amazed at how large a serving is for the price.

The grilled pork sisig is a must-try. The pork is tender and soft, but the crispiness of the chicharon that they include is superb. One can’t help but eat another round (or two) of extra rice and try to finish the amazingly tasty meal.

The daing na bangus is another Filipino dish that Sargents offers. The fresh taste of the bangus is not lost in the process of daing. Every bite makes you want to have another one and without noticing it, you have already consumed the entire plate — a perfect combination with ice-cold soft drinks.

But the one dish that everyone should order is their crispy pata, of course. Sargents raises the bar with their secret recipe of marinades and sauces, as well as technique of making it perfectly crispy and juicy. It is simply a piece of heaven in your mouth. One taste and the juicy flavors of the pata ooze in your mouth and you can’t help but close your eyes and savor the delicious flavor.

“We at Sargents value our customers’ satisfaction and concerns and so we make sure to set high standards when it comes to purchasing, producing, and handling our food items,” says Tan. “We only get our pork from sows. Frozen items for takeout orders are vacuum-sealed to ensure the consistency, quality, and freshness of our products.”

Sargents aims to expand outside Laguna and offer its delicious takeout meals to the residents of Metro Manila. A delivery system is also in the works.

“We are currently testing the market here in Manila and thankfully we are getting good reviews. You can try our products at Wei Wang (Wilson, San Juan), Jash Mart (Wilson, San Juan), Little Store (San Juan and Gilmore), and Fresh Fields (Market! Market!, Bonifacio Global City).   Hopefully with the support of our customers, we wll be given the chance to expand here in Manila.”
