MANILA, Philippines - Mama Sita’s, the famous brand of sauces and mixes, puts extra zest into the celebration with the flavorful relish of Mama Sita’s Caldereta — a special sauce that combines the rich aroma and taste of classic caldereta that Teresita “Mama Sita” used to concoct with so much passion and flair.

The meaty flavor of Mama Sita’s Caldereta, livened up by the relish of real tomato sauce, is based on Mama Sita’s favorite family recipe that has been handed over from one cooking enthusiast to another for five generations. The same treasured heirloom recipe can be enjoyed this holiday in two convenient ways: Mama Sita’s Caldereta Sauce, which is ready to simmer, and the Mama Sita’s Caldereta Mix, a dry spice mix that homemakers, cooks and professional chefs will enjoy using.

Mama Sita’s flavors have been inspired by treasured recipes and Teresita “Mama Sita” Reyes’ own concoctions. Her passion for cooking, as well as her single-minded pursuit of preserving the traditional flavors of authentic Filipino cookery, have prompted this culinary icon to record time-honored recipes and methods of cooking, as well as recreate classic favorites by giving them surprising but delicious twists. By searching for new ways to bring the flavors of Filipino food abroad, she has helped modernize the food industry by introducing convenient ways to prepare Filipino food.

Paella Filipina

Ingredients:

1 cup + 1 tbsp glutinous rice

1 1/2 cup + 1 tbsp long-grain rice

2 tbsp olive oil

2 tbsp (3 cloves) garlic, minced

1 pc (60g) onions, chopped

2 pcs (90g) tomatoes, cored, seeded and chopped

1 pc ( 100g) chorizo, sliced diagonally 1/2” thick

1 pc (60g) ed bell pepper, cored, seeded and minced

2 pcs (250g) alimasag, split in halves

1 cup (250g) mussels (tahong), beards removed

250g shrimps, peeled and de-veined

250 g squid, cut into rings, 1/4” thick

250 g chicken, cut up

5 cups water

1 pouch (50 g) Mama Sita’s Caldereta mix

1 tsp Mama Sita’s Annatto powder

1 tbsp fish sauce

100g sweet green peas

 

Garnish:

1 pc egg, hardboiled, cut into thin round slices

 

Procedure:

1. In a pot, combine glutinous and long-grain rice. Rinse twice. Drain and set aside.

2. In a paellera or large sauté pan, heat olive oil. Sauté garlic, onions, tomatoes, chorizos, bell pepper, alimasag, tahong, hipon and squid until they change color.

3. Add the glutinous and long-grain rice and stir until well blended.

4. Add water, Mama Sita’s Caldereta Mix , Mama Sita’s Annatto Powder and fish sauce. Mix until well blended. Bring to a boil.

5. Lower the heat and simmer. Cover and cook until done.

6. Add green peas and sliced boiled egg.
