Date Meringue Cake
Ingredients:
1 cup dates
2 tablespoons sugar
3/4 cup water
1/4 cup chopped nuts
1 pck. (500g) Maya Decadence Devil’s
Food Cake Mix
1/2 cup butter, softened
1 pc. egg
6 pcs. egg whites
1/2 tsp. cream of tartar
1 cup sugar
Procedure:
Preheat oven to 350°F/177°C. Grease and flour a 9-inch round pan. Set aside. In a saucepan, combine dates, sugar and water. Cook until thick. Add nuts. Cool and set aside. In a bowl, combine the cake mix, butter and egg. Press mixture evenly in the prepared pan. Pour date mixture. Bake in a pre-heated oven for 20 to 25 minutes or until cake is done. Cool.
Prepare icing: In a mixer bowl, beat egg whites with cream of tartar. Add sugar, beat until mixture reaches stiff-peak stage. Spread meringue on filling, forming spikes. Quickly bake just until golden brown.
