Enderun Colleges teams up with TourFlair for exotic 'Food Safaris' series

MANILA, Philippines - Enderun Colleges and TourFlair have teamed up to create a series of exotic Food Safaris, that takes foodies on a gustatory tour from north — Pampanga, Bataan and the Ilocos Region — to south (Bicol Region) of the Philippines. The food expedition kicks off with the Pampanga Food Safari on Sept. 24 and 25.

The two-day affair opens with an elegant dinner by famed chef extraordinaire and Iron Chef USA winner chef Nicolas Cantrel at Enderun’s Restaurant 101 at 5 p.m. on Sept. 24. Fusing French (he started his career with Alain Ducasse at La Relais du Parc in Paris) and Filipino influences, Cantrel will give a one-hour demonstration on two of his creations, followed by an aperitif, hors d’oeuvres, and an extraordinary four-course meal (with a dish featuring his much-loved secret ingredient — gruyere) with wine pairing for P3,200 per person.

Chef Sau del Rosario

On Sept. 25, a select group of participants (also P3,200 per person) will get the chance to travel to Pampanga and visit a turn-of-the-century chocolate shop to sample and witness how tsokolate was made during the olden days. Lunch will be served in an authentic 18th century Spanish-Filipino heritage home in Angeles, where acclaimed “green” chef (referring to his penchant for using home-grown ingredients) and acclaimed Pampango chef Sau del Rosario will perform his magic in the kitchen.

Tour participants will get to savor a gourmet menu highlighting Pampangueño cuisine, preceded by a short food demonstration. After lunch, guests will be taken to see the exquisite Betis Church and several vintage shops to taste local kakanins (local desserts or delicacies) before heading back to Manila.
