Mother's Day chicken recipes to treasure

MANILA, Philippines – Mother’s Day will always be a special event, not only for the homemaker but also for her family and friends. So it’s only fitting to cap it all off with a celebration. Magnolia Chicken Station provides you with easy-to-prepare party recipes that will surely reward deserving moms.

 

 Magnolia 7-Treasure Chicken

Ingredients:

1 whole Magnolia fresh chicken, deboned (available at the Magnolia Chicken Station)

2 pcs. Chinese sausage, sliced

1/4 tbsp. dark Chinese ham scrap

4 pcs. shiitake mushrooms, soaked and sliced

1 tbsp. dried shrimp

1/2 cup pork asado

1 cup roast duck

1/4 cup chestnuts (if dried, soak for 30 minutes)

1/4 cup lotus nuts

1 tbsp. soy sauce

1 tsp. ginger

1 tsp. scallions

3 tbsps. peanut oil

5 stalks pandan leaves

2 cups chicken stock

1/3 cup oyster sauce

1/4 tsp. black pepper

2 tbsps. Shaoxing Wine

1/4 tsp. sugar

3/4 cup freshly brewed jasmine tea

1/2 cup rice

Procedure:

Marinate deboned Magnolia chicken in dark soy sauce, ginger, rice wine, and five spices. Sauté ginger, scallions, and pandan in peanut oil. Add rice until cooked completely.

Add oyster sauce, soy sauce, sugar, pepper, and wine. Slowly add stock little by little, then add tea. Stuff in Magnolia chicken.

Add all other ingredients and wrap in foil or lotus leaves, and steam for one hour or roast for 35 minutes in foil only. 

 

 Magnolia Chicken and Anchovy Pasta

Ingredients:

200 gms. Magnolia Chicken Station breast fillets, cut into cubes

400 gms. cooked penne (al dente)

1/4 cup olive oil (preferably Nutrioil)

1 tbsp. garlic, minced

1 pc. med. onion, finely chopped

4 pcs. anchovy fillet, chopped

1/4 cup sun-dried tomatoes, plumped in warm water

3 tbsps. green olives, cut into wedges

3 tbsps. pistachio, roasted and cut into halves

1 cup cream

2 tbsps. Antonov vodka

1/8 tsp. cumin

1/8 tsp. cinnamon

               pinch nutmeg

1 tbsp. basil, chopped

 salt and pepper

1/4 cup grated Parmesan cheese (preferably Magnolia cheese)

Procedure:

Sauté garlic and onion in olive oil.

Add Magnolia fresh chicken and anchovies. Add the rest of the ingredients, except basil, and simmer. Season with salt and pepper.

Toss pasta and basil with the sauce, then garnish with Parmesan cheese.
