Radisson Blu Hotel Cebu welcomes new Executive Chef

MANILA, Philippines - Chef Marco Amarone, an Italian chef renowned for his signature international cuisine, was recently appointed as Executive Chef of Radisson Blu Hotel Cebu.

His sumptuous handmade pizza and pasta creations as well as his gourmet ice cream selections are available for guests at the Hotel’s all-day dining restaurant, Feria.

“In Italy, our love for food and wine is part of the culture. It’s palpable in feast-like servings and warm family gatherings. When I began my career in the kitchen, I drew inspiration from the best cuisine I’ve sampled from restaurants, homes and even local street fare,” Amarone recalled.

Amarone’s culinary experience spans two decades. His career began with an apprenticeship at age 16 at the Michelin-star restaurant Don Alfonso in the Sorrento Coast.

He trained at Pergola at the Waldorf Astoria Hotel in Rome and had collaborations with Ferran Adria of the renowned El Bulli restaurant of Spain.

He was also a pioneer at Robert de Niro’s AGO restaurant in Los Angeles and served as Executive Chef for various five-star hotels in Europe, the United States, New Zealand and Southeast Asia.

In December 2003, he became the Executive Chef of the Garibaldi Group of Restaurants and traveled to Singapore, New Zealand and Tokyo for menu creation, kitchen training and restaurant openings.

In 2009, he became the Executive Chef of Centara Grand Beach Resort Thailand and later moved to Anantara Resort, Thailand.

Amarone has personally served renowned dignitaries such as the Prime Minister of Italy and the King of Jordan and has prepared dishes for celebrities such as Al Pacino, Matt Damon and Madonna during his stint at AGO restaurant in Los Angeles.

Prior to joining Radisson Blu Hotel Cebu, Amarone was the Executive Chef of the high-end cruise liner The World Residences at Sea. 

Amarone had this to say when asked about his food philosophy: “The quality of the dish is the most important thing. The freshest ingredients make a difference. When you have the right ingredients, keep the dish simple and create a balance of flavors.”
