French Michelin-star chef Nicolas Isnard at Mandarin Oriental Manila

MANILA, Philippines - The Tivoli, Mandarin Oriental, Manila’s European fine-dining restaurant, welcomes French Michelin-star chef Nicolas Isnard, who will be here from Nov. 18 to 24.

Chef Nicolas co-owns the L’Auberge de la Charme restaurant, which earned a Michelin star in 2009, within a year that he and his three partners began operation. The restaurant also boasts four Gault & Millau toques. His cuisine combines tradition and innovation, mixing distinctive rustic flavors with provincial produce in the presentation of classic French dishes.

The fresh and sumptuous flavors of chef Nicolas’s home country will be presented in the business lunch and a la carte menus that will feature some of his specialties, which include Farmed Chicken Egg, Autumn Flavors and Bourgogne Truffle, Snake River Kotabura Pork Filet, Green Peas a la Francais, and Dijon Mustard Jus, Onion Soup “Contemporary Style,” US Prime Angus Beef Tenderloin, Snails “Burgundy Style,” Garlic Emulsion.

Food lovers and culinary enthusiasts who wish to learn tips from chef Isnard can attend his cooking demonstration on Nov. 23, which will consist of foie gras carbonara style; Chilean sea bass, hounous and lemon ginger broth; and his signature exotic fruit salad. The experience includes lunch serving these three dishes at P2,850 per person. Limited seats are available.

 â€œWe all look forward to welcoming chef Nicolas at The Tivoli,” says executive chef Rene Ottlik, adding that the Tivoli kitchen brigade headed by executive sous chef Remi Vercelli are excited to be collaborating with the Michelin-star chef.

“We’re privileged to be the third Mandarin Oriental property to be working with him and confident that during his stint at The Tivoli, we can further delight our guests by taking their fine dining experience to a whole new level.”
