MANILA, Philippines — The world is simply fascinated with royalty. This is why royal families continue to be recognized and admired the world over so much so that hundreds, even thousands of babies have been named after them.

These days, not only babies are named after the most famous members of royal families. Even desserts have their own royalty, one of which is the Queen Elizabeth Cake.

Elegant and lovely in its very special way, the Queen Elizabeth Cake is named after Queen Elizabeth II of the United Kingdom. Originating from Canada, it is a lightly sweet and moist cake loaded with dates and topped with broiled coconut caramel frosting. 

 

It was once especially made for the 1953 coronation of Queen Elizabeth II. Now you can bake it for no occasion at all with this recipe of Queen Elizabeth Cake from The Maya Kitchen. Apart from sharing it as a free recipe, The Maya Kitchen has also included it in its "The Best of Cakes and Pastries New Edition."

Queen Elizabeth Cake

Ingredients:

For the cake:

1 1/2 tsps. baking soda

1 1/2 cups chopped raisins

1 1/2 cups boiling water

1/3 cup butter

1 1/2 cups sugar

2 eggs

1 1/2 tsps. vanilla extract

2 1/4 cups Maya All-Purpose Flour

1 1/2 tsps. baking powder

1/2 tsp. salt

3/4 cup chopped cashew nuts

For the topping:

1/2 cup brown sugar

1/3 cup evaporated milk

1/3 cup butter

2/3 cup chopped cashew nuts

Procedure:

1. Preheat oven to 350°F/177°C.

2. Grease and line a 13x9x2-inch baking pan. Set aside.

3. Prepare cake. Combine baking soda, chopped raisins, and boiling water in a bowl. Cool completely.

4. Cream butter and sugar until fluffy.

5. Add in eggs and vanilla.

6. Sift flour, baking powder, and salt together. Then add to the creamed mixture alternately with the cooled raisin mixture. Stir in nuts.

7. Pour into prepared pan and bake for 35 minutes or until done.

8. Prepare the topping. In a heavy-bottomed saucepan, combine all ingredients for topping and let boil for 3 minutes.

9. Spread over cake then broil until golden brown. Let cool. Remove from pan. Cut into squares or rectangles and serve.
