MANILA, Philippines — Your cousins and their families are coming over to the house this Holy Week. While most of Manila-based families whose parents are on a work break are off to the province for a little rest and relaxation, your provincial based relatives are turning the Holy Week habit around by coming to Manila.

Come to think of it, Manila is a good place to be during Holy Week because a lot of people are in the provinces, there is no traffic, and the air is relatively cleaner than usual.

 

What do you serve your relatives? Meatless options, of course, and one of the first things that you can serve them — for snacks or appetizers — is Messe Fries, suggested Chef Martin Narisma. He developed this recipe for Fly Ace Corp. for the Lenten season this year, and so far it is proving to be a big hit.

Messe Fries

Ingredients:

For the Tzatziki Sauce:

1 pc. (80 grams) cucumber, grated, excess liquid removed

1 clove garlic, finely grated

1 cup (250 ml.) Emborg Plain Yogurt

1 tbsp. lemon juice

1 tbsp. Langnese Golden Clear Honey

1 tbsp. fresh dill, chopped

1/4 tsp. salt

1/8 tsp. pepper

2/3 cup Doña Elena Extra Virgin Olive Oil

For the toppings:

Farm Frites Waffle Fries

Chopped tomatoes

Red onion, thinly sliced and soaked in cold water, then drained

Crumbled Feta cheese

Doña Elena Capers

Chopped flat-leaf parsley

Procedure:

1. In a bowl, combine grated cucumber, garlic, Greek yogurt, lemon juice, honey, dill, salt, and pepper.

2. While mixing, slowly drizzle in Doña Elena Extra Virgin Olive Oil and whisk until smooth and fully emulsified. Set aside.

3. Cook Farm Frites waffle fries until golden brown and crispy. Season lightly while hot.

4. Arrange fries on a serving plate in a single layer. Spoon over just enough Tzatziki to coat the fries without soaking them. Top with tomatoes, drained onion, crumbled Feta cheese, and Doña Elena capers.

5. Garnish with parsley and finish with a light drizzle of Doña Elena Extra Virgin Olive Oil.
