Bobby Chinn at Mafbex 2009

MANILA, Philippines - He runs what the Asian Wall Street Journal describes as “one of the best restaurants in Asia” and in doing so, is hailed by the New York Times as an “anomaly in Hanoi.” But during the 3rd Manila Food and Beverages Exposition (Mafbex), Chinn is poised to assume another role — to tour Filipinos in the “International Food City.”

Considered as the biggest and most comprehensive food show in the Philippines, Mafbex brings the latest food, drink, and culinary equipment ideas from Europe, China, Malaysia, and the United States. Mafbex 2009 is slated from June 17 to 21 at the World Trade Center Manila.

Worldbex Services International (WSI) is further elevating the local culinary scene to world-class standards by exclusively flying Bobby Chinn to the Philippines. 

“There’s no doubt that our cuisine is already remarkable in its own right,” shares Joseph Ang, founding chairman of WSI. “But there should be no reason not to elevate Filipino artistry further and this is why we’ve invited Bobby Chinn. “

The French-trained, New Zealand-born, San Francisco chef of Egyptian and Chinese heritage will be the main chef in this year’s Mafbex. He will showcase his unique culinary sensibility in a series of food demonstrations.

“It will be a privilege for his growing Filipino fan base to see him in action,” says Ang. He notes that in Mafbex 2009, local gourmands and food enthusiasts will be privy to how his cutting-edge cuisine fuses the Vietnamese practice of clean flavors and contrasting colors, and divergent textures with the characteristically French attention to detail and precision.

Bobby Chinn’s signature mignon spring rolls and tamarind glazed crab cake on chive flowers as well as his take on traditional Filipino dishes are only some of the dishes to look forward to.

Aside from bringing in the Hanoi-based chef, Mafbex 2009 also serves as the venue for the ASEAN Bartending Championship. Under the umbrella of the ASEAN Hotel and Restaurant Association (AHRA) consisting of the 10 ASEAN member nations — Brunei, Cambodia, Indonesia, Lao PDR, Malaysia, Myanmar, the Philippines, Singapore, Thailand, and Vietnam — the event will gather young skilled professional bartenders of the ASEAN region to further promote and improve the standards of bartending in the hotel and restaurant industry.

“It’s not an exaggeration to say that we’re bringing the very best of the culinary world into Philippine shores,” enthuses Ang.
