Chef Luis Martinez expands his legacy from Terraza Martinez to Sala Martinez, which is now open at Shangri-La Plaza. Savor the essence of his homeland with every bite inspired by the heart of Spain.

Casa Martinez serves everything from authentic tapas to unforgettable paellas and other regional favorites from Spain.

Luis, who also runs Alma in Poblacion (a branch of Alma Siargao), employs traditional cooking techniques and uses only the freshest seasonal ingredients to bring the coastal flavors of his motherland to the tables of his restaurants.

Paella Valenciana, a beloved dish from his hometown, is something he has mastered since the age of seven while cooking in his family’s kitchen.

Sala Martinez has the same cozy and relaxed ambience of Terraza Martinez in BGC. This was designed by his childhood best friend, Marta Sanchez. The dining room blends ocean hues and touches of terracotta.

Some starters I enjoyed (that are not available in Casa Martinez) are Almejas Marinera (steamed clams and tomato), Oreja de Cerdo Plancha (Grilled Pork Ears), and the Sala Manitas de Cerdo (“callos” style pork leg). Also try the Crema de Patata Trufada y Huevo (wild mushrooms, 63 -degree egg, and shoestring potatoes), which is one of my personal favorites.

Make sure to get the classic Asturian dish, Cachopo, which is breaded veal stuffed with jamon Ibericoand Manchego cheese served with a side of mashed potatoes; Arroz Al Horno, which is a hearty rice stew that can be ordered with crab claws, the Rodaballo al Carbon (my favorite heavenly charcoal-grilled turbot served with a sauce made of brown butter, fried capers, and shallots), and the Presa Iberica de Cerdo (seared Iberico pork loin, truffle mashed potato, caramelized shallots, and wild mushrooms).

Chef Luis transitions from cooking simple Spanish fare at Alma in Siargao to an elevated dining experience at Sala Martinez, where rustic flavors evolve into refined culinary creations. *
