 CEBU, Philippines - The culinary adventure continues with Bluewater Maribago's third installment of "Northern Exposure 2012: The Best of Manila Restaurants & Chefs Series". Next stop: Villa Café with Sau del Rosario, one of Manila's top celebrity chefs and leading experts in northern Filipino cuisine.

Experience the Kapampangan-inspired dining concept, with a flavorful array of signature appetizers, entrees and delectable desserts from Villa Café, right here in Cebu!

Villa Café embraces the use of regionally sourced ingredients, traditional and contemporary cooking methods with artistic presentation, and it presents a unique dining experience that blends Pampanga flavors with its neighboring influences.

Among the must-try popular restaurant offerings to be prepared by Chef Sau and his team, featured at Bluewater Maribago's Allegro dining outlet, are Fern, Watermelon and Prawn Salad, Lemongrass Escargot with Puff Pastry, Camaru and Vegetable Spring Rolls, Bulanglang Salmon Belly (Guava Sour Soup), Lamb Chops Kaldereta, Aligue Fried Rice, Pastel de Lengua, Duck Adobo with Boiled Egg, Gule Marangle (Pinakbet with Lechon and Prawns) and many more! About the Chef

French-trained Sau del Rosario was born and raised in the center of Philippine gastronomy, Pampanga. Sau took his professional training in Nice, South of France under the guidance of Michelin Chef Christian Plumail of Restaurant L'univers. Sau took a job in the prestigious three Michelin Restaurant Le Divellec in Paris the following year before moving to China to open Luna in Shanghai. After two years in Shanghai, Sau took the job as Chef de cuisine of the famous Raffles Chain's Equinox. In 2005, Sau heeded the call from Manila and opened M Cafe, Chelsea, Madison Grill, Le Bistro Vert and Toro. The restaurant Villa Café in Makati is Chef Sau's latest venture. This Pampango chef is generous to share some of his family's heirloom recipes.
