“An Evening in Bordeaux”

CEBU, Philippines - The premiere seaside resort at Mactan recently welcomed the newest member of its culinary team. Now at the helm of the Cowrie Cove – the signature seaside restaurant of Shangri-la’s Mactan Resort & Spa – is Chef Daniel Quintero, whose delectable creations were the bespoke stars of the welcome dinner held in the restaurant on Monday, November 7.

Attended by select guests and members of the media, the gathering – billed “An Evening in Bordeaux” – educed Chef Quintero’s approach in the preparation of specials, characterized by a keen attention to detail; and underscored by an understanding of what a difference even the smallest ingredient could make.

This was complemented by the young chef’s versatile approach in matching fine Bordeaux wine vintages with his creations – as each of the dinner’s featured fare were aptly paired with a range of whites and reds by Les Chateaux de Bordeaux.

Starting with the chef’s novel take on “kilawin” (prepared with fresh coconut water jelly and calamansi granit), the dinner prefigured what Chef Quintero was to bring to the table spread of Cebu’s culinary court.

Matching a red wine coulis with pan-fried grouper (served with muscatel raisins and baby gem lettuce) and pairing a full-bodied red with a coffee-infused tenderloin steak course, the dinner guests got a firm hint of how Chef Quintero thinks outside-the-box in blending textures, flavors and tangs that are both novel and familiar; intrinsic and definitely engaging.

Raised in Argentina, Chef Quintero joined the Shangri-la family in 2014. Serving as the Chef De Cuisine of Restaurant Grill 79 at China World Summit Wing in Beijing, he previously had been with Michelin star-rated restaurants in Germany, Spain and Britain. His coming to Shangri-la Mactan is sure to be a plus to the resort’s long-running tradition of serving season-inspired specials, innovative culinary creations and bold entrées. (FREEMAN)
