Chef Chele Gonzalez of Gallery Vask invited me to a dinner I could not resist. He and his friend Julieta Caruso, who is the former head chef of one of the world’s best Spanish restaurants called Mugaritz, traveled all over the Philippines for over a month to source and experiment with local flavors.

Chef Chele Gonzalez invited me to try his new menu at the Gallery — the fine dining, degustation area of Vask. I could hear the giddiness in his voice, talking about the different flavors from his recent trips that he infused into it, about  a conscious direction to move towards more local produce. The meal was a shining mirror of that passion and drive, and one of the most enjoyable I’ve had recently.

VASK is located on the 5th floor of the CLIPP center. True to its name, the interior is very sleek and modern, doused with interesting artworks from Jesus meets Darth Vader to contemporary wall installations.

The Vask Gallery presented “Modern Global Cuisine, Infinite Possibilities,” a culinary master class with Michelin-Starred chef Oscar Calleja from the celebrated Spanish restaurant Annua, in tandem with his former colleague and friend, Vask’s own chef Luis Gonzalez.

Nestled in the fifth floor of a boldly designed building, in an up and coming part of the Fort, surrounded by half constructed buildings and the large swooping arms of cranes all partaking in the forward dance of development is Vask.
