Chef Alain Ducasse to keynote forum

MANILA, Philippines - On Feb. 24 at 2 pm, Enderun Colleges and the Alain Ducasse Formation will host a forum dubbed “Before Cuisine, There was Nature.”

Visiting the Philippines for the first time, French national Ducasse is one of the rare chefs in the prestigious Michelin guide’s history to run restaurants carrying three-star rankings in three different cities.

From his humble beginnings in rural France to his present internationally-renowned reputation, Ducasse never ceases to present high-quality authentic food, amazing the palate and entertaining the senses. Author of the “Alain Ducasse Culinary Encyclopedia” and numerous other celebrated culinary books, he established the Alain Ducasse Formation to encapsulate his methods and to provide training and consultancy services to chefs.

The forum, of which Ducasse will be keynote speaker, will be joined by other industry leaders who will present ground-breaking perspectives to help inspire innovation among industry practitioners.

Among them are Dr. Lance Masters, provost of Enderun Colleges; Bel Castro,?Enderun faculty for F&B; Reto Klauser, general manager of Makati Shangri-La; chef J Gamboa, director of Les Toques Blanches Philippines; and Amy Besa, New York-based award-winning author and restaurateur.

The event will likewise have the special participation of F&B World’s editor-in-chief Nana Ozaeta. They will be sharing ideas on sustainable culinary management practices, promotion of natural and locally-sourced cooking ingredients, establishing flexible standards that enable unique cultural values through cooking, and maintaining a commitment to change in order to challenge and drive continuous improvement of industry practices.
