PARIS, France — Ritz patissier François Perret was named the best pastry chef in the world by the Association des Grandes tables du monde.

He shares some tips for creating the perfect pastries.

"It's very important for me to have products that are voluminous and the real difficulty is there: it's that volume is good, BUT lightness is better. So that's where it gets complicated: having a large but light cake is not easy. But it's something I try to do on a daily basis," Perret said.
