Discovering the art of chocolate appreciation

MANILA, Philippines – More than just being a sweet treat and a year-round favorite gift, chocolate is also appreciated depending on one’s taste, mood, lifestyle and even cultural background. During a recent chocolate appreciation event, Chocolatier Benjamin Pedro, co-owner of Heavenly Chocolates, explained the various complexities, layers, textures, characteristics and flavors of chocolate.

According to Pedro, it all begins where the cocoa beans came from. Known as single origin or namely Ecuador, Venezuela, Peru and Madagascar, these countries are the top sources of cocoa beans that are used around the world, including Switzerland and Belgium.

Aside from understanding the science and art behind each single origin, Pedro adds that what makes chocolates really special are the healthy benefits that you can get from it. Rich in anti-oxidants (note: the higher the cocoa content the healthier the chocolate is), chocolates also help release endorphins that evoke feelings of happiness and comfort, provide energy boost and promote intellectual stimulation.
