CEBU, Philippines - Sweet Alert, Inc. joined forces with Cebu Holdings Inc. and Ayala Center Cebu for the second year of the “Agbayay sa Kahimsug, Healthy Lifestyle 2011” campaign last July 23 to mark opening of Diabetes Awareness Week.

The proponents demonstrated how changing one’s lifestyle into a healthier one adds more years to our life. Among those who partnered in the cooking demonstration of healthier food menus is Meat Magica, a locally produced all-natural meat alternative. Because it is made from soya and carrageenan which is zero in fat and cholesterol, and very rich in protein and fiber, Meat Magica is best for those wanting to cut down on consumption of red meat without necessarily dropping essential nutrients needed by the body to function normally.

Here are nutritious recipe ideas from Meat Magica:

Magica Salad

Preparation:

Soak 1/2 cup Meat Magic Flakes into 1 cup tap water for 3-5 minutes. Drain. Squeeze out the excess liquid.

Main Ingredients:

1 pack macaroni (400gms)

1 pc. apple, diced

1 can pineapple tidbits (430gms)

2 packs mayonnaise (220 ml)

1 pack all-purpose cream (220 ml)

1 pc green bell pepper (large), diced

2 tbsp sugar

1/2 tsp salt

Procedure:

Cook pasta according to package direction. Drain and allow cooling. Dice apples and soak in pineapple syrup to prevent discoloration. Dice the green bell pepper. Prepare in a separate bowl the salad dressing (mayonnaise + cream + sugar+ salt). In a large mixing bowl, place the cooked pasta and the prepared flakes, pineapple tidbits, apple and green bell pepper. Pour the salad dressing and mix well. Serve when chilled.

Serves 4-8 persons

Siomai Magica

Preparation:

Soak 1 cup Meat Magic Flakes in 2 cups of tap water for 3-5 minutes. Drain. Squeeze out the excess liquid. Season with:

1 tbsp. brown sugar

1 tbsp. ground pepper

1 tbsp. soy sauce

1 tbsp. calamansi extract

Main Ingredients:

1/2 kl. ground pork (optional)

1 tsp. potato flour or cornstarch

1/4 kl. shrimp, finely chopped

1 clove garlic, chopped

3 tbsp. onion, finely chopped

1 tbsp. soy sauce

1 tsp. refined iodized salt

1 tsp. black pepper

1 tsp. sesame oil

pinch of brown sugar

siomai wrapper

Procedure:

Add potato flour to ground pork (optional) for better binding. Add seasoned Meat Magica flakes to the pork mixture; then the chopped shrimps. Next, gradually add the rest of the ingredients and continue mixing by hand. Mold 1 tsp. of the mixture into the siomai wrapper. For better presentation, top with sliced mushroom or ½ hard-boiled quail egg or green peas. Steam for 15-20 minutes. Serve hot.

Yield: 25 pieces

Meat Magic Balls

Preparation:

Soak 1 cup Meat Magic Flakes in 2 cups of tap water for 3-5 minutes. Drain. Squeeze out the excess liquid. Chop finely if desired. Season with:

1 tbsp. brown sugar

1 tsp. ground pepper

2 tbsp. soy sauce

Main Ingredients:

½ kl. ground pork (optional)

1 tbsp. garlic, chopped

½ tsp. refined iodized salt

1 tsp. soy sauce

1 tbsp. onions, chopped

1 pc. egg, well-beaten

1 tsp. cornstarch

¼ cup all-purpose flour

¼ cup Crispy Joy coating

Procedure:

Mix all the ingredients including the seasoned flakes until the mixture becomes sticky. Form into balls in a desired size. Deep fry until golden brown. Serve with your favorite sauce for dipping.
