CEBU, Philippines - Tablea, produced through roasting cacao seeds, is now being introduced by tablea connoisseur, the power couple Raquel and Alfred Choa of Ralfe Gourmet as a baking ingredient that is a pantry essential. And on May 25, they were able to showcase the limitless possibilities of whipping pastry creations through tablea as the Choas officially launched Ralfe Gourmet. It was attended by chocolate worshippers, as well as pastry chefs from the different restaurants and top hotels in Cebu. Ralfe Gourmet, supported by Cocoa Foundation of the Philippines, Inc. (CocoaPhil), produces tablea from 100 percent cacao with no preservatives and additives. They also grow their own trees. Currently, RG has four products: the Singles – each sealed with metal plastic to keep its freshness, Tablea Blocks for baking that are sold in kilos, Cacao Powder, and the thin, coin-shaped (quick melt) Tablea Disc for choco drinks and ganache.
