Recently there have been some developments in Westborough. Apparently, potential business has inspired some establishments to set up camp there. This is much welcomed.

Residents of the Westborough area in Cavite usually cross over to the Nuvali Estate in Sta. Rosa to shop and dine or watch a movie. The drive takes about 8 minutes. But recently there have been some developments in Westborough. Apparently, potential business has inspired some establishments to set up camp there. This is much welcomed.

Already there is Marketplace on South Road which opened in March. Conveniently, this gives homemakers and gentlemen-shoppers easy access to their daily needs. Premium products, meats local and imported (mostly from Australia), a wide selection of cheeses, even  packaged salmon (good for sashimi) are among the items it carries.

Last weekend, we discovered the newly opened Coffee Bean & Tea Leaf there. Not only for coffee and/or tea but for full meals, and of course their delectable cakes. As usual, our young girl opted for spaghetti but as it was nearly lunch time, we chose to have brunch. We ordered scrambled salmon and eggs mounted on half a roll of bread which was plated with  a small green salad and two pieces of toasted bread. As the place is still a work in progress, we look forward to more establishments setting up there.

A lake is being made in one area. There is no problem of parking. Quite a refreshing place for tete-a-tetes or meals.

“Sol de Agosto” was what our elders would say whenever the month of August came around. It meant hot days are coming. Yet we still experience occasional rains and thunderstorms. Even as the sun shines brightly, we are reminded of a dish we would have during rainy days. Rain or shine, this is a  delicious soup to serve – Macaroni with Meat Balls Soup.

Ingredients:

150 gms soup macaroni

1/4 kilo lean ground pork

2 eggs, beaten

1 onion, half minced, the other half sliced

Half a head of native garlic, crushed

Salt and pepper

One tbsp patis

Spring onions, chopped

1-1/2 cups water

1 tbsp evap milk

Procedure:

Mix ground pork with chopped onion, season with salt and pepper.

Add eggs and form into balls, set aside.

In a caserole, sauté garlic and sliced onion. Season with patis, cover and simmer for a while.

Add macaroni and water. Cook the pasta.

Then drop the meat balls, stirring.

Add the milk, continue to boil. When pasta is done, add the spring onion.

Voila! A hearty soup.

Have a joyous Sunday!
