I’ve been to every anniversary of Anya since it started, except for last year where they didn’t celebrate, for obvious reasons.

Their fourth year was something I really looked forward to since in two years I hadn’t been to this place in Tagaytay I can call home. It is only an hour’s drive from Makati City.

The same warm hospitality and flawless service greeted me when I arrived for this very special and intimate dinner to celebrate their four years as a top destination resort and a member of the Small Luxury Hotels of the World.

Anya has a new Spanish executive chef with Albert Reverte recently joining them. H prepared the anniversary dinner together with guest chef Chele Gonzalez of Gallery by Chele.

President and CEO of Roxaco Santi Elizalde and his brother Patxi were present, along with Anya Hospitality Group’s managing director Juan Roca, resident manager Noli Soldevilla, and Anya Resort Tagaytay general manager Mikel Arriet.

It was an excellent collaboration between the two Spanish chefs as they prepared small dishes such as Insulin (that’s the name of the leaf it was wrapped in) Kurobuta (Japanese pork) Tacos, Seafood Crisp Rice Cracker, Kare-kare Bon Bon (also served in Chele’s restaurant), Foie Gras and Mango Waffles, Kraby, which was a very refreshing crab salad, French Connection (a prawn with ikura sauce), and Callos con Bacalao y Ali-Oli.

The piece de resistance was the main course of Iberico Pork Ribs served with Porcini Truffles and Mushroom Rice. Dessert ended with Tagaytay’s most famous fruit as the highlight in Tagaytay Pineapple Expressions, showcasing the pineapple in different forms and textures.

Wines served that night were Madfish Shiraz Australia 2017 and Chardonnay Domaine Baillard Chablis Premier Cru France, 2013, both sponsored by Wine Depot.

The dinner was splendid and served to a very small crowd, a far cry from the past anniversary dinners. At least Anya Resort is now able to accept guests every now and then, depending on the community quarantine rules.  Hopefully their fifth anniversary next year can be a bigger event if things normalize soon.
