“You can learn a lot about becoming a better cook by eating. A lot,” says Sharwin Tee in his new book, The Gospel of Food.  I totally agree with him!  I have learned a lot eating food from all my travels and he describes his experience about food and eating abroad in a follow-up to his first book, So You Want to be a Chef?

Sharwin is a multi-hyphenate type of guy.  He writes for Philippine STAR Lifestyle and used to teach a culinary arts elective in Xavier School (my alma mater). His previous show on Lifestyle Network was Curiosity Got the Chef and he has a cooking talk show called Let's Do Lunch with the first season broadcast on GMA News TV, while the second season is already in the can. He is also a co-host of the Sini Gang podcast on Spotify, as well as owned and operated The Quirky Bacon in San Juan City.

His book has compiled recipes and stories about his eating adventures all over the world.  Sharwin trained at the Pacific Institute of Culinary Arts in Vancouver, Canada, and part of that training was working there as both cook and server. He worked as guest chef (in UAE and Russia) and at his pop-ups in Chicago, San Francisco, St. Louis, Portland, and Detroit, USA.

I learned more about Sharwin during the Q&A portion of his book launch via Zoom, which was moderated by Anvil Publishing’s Xandra Ramos.  Sharwin has had a huge exposure to the food of other cultures, not only because he worked abroad, but also because his family, like him, also loves food and they insisted on eating local wherever they found themselves.   He also said his dream destination is Portugal since he thinks he would really enjoy their cuisine.

His book is divided into chapters that recall his times in (and recipe inspirations from) Abu Dhabi, Singapore, Hong Kong, Penang (Malaysia), Vancouver, and locally in Pampanga, Cebu, and Cavite.

I met chef Sharwin years ago and he is easily one of the nicest and most humble chefs around.  I am happy to have his book, which makes really good reading! He says he is merely “a vessel” for this new book, as the food experience or lessons he narrates are from other people, as opposed to his first book, where the content came from him.

During the Zoom launch, he also demonstrated his “Midnight Madness Noodles,” a simple dish that one can cook to satisfy their midnight cravings.  This was inspired by garlic noodles found in those Chinese restaurants in the United States that are open 24 hours a day. The dish looked really interesting and the recipe is versatile, as one can easily substitute the ingredients for whatever they have at home.  This recipe and others are in his new book.
