No more than a decade, the Fort was considered as a military base, a wide piece of land stretched just across the popular business district of Makati. Fast track to 2013 — and it’s now an urban community where various modern residential buildings and giant firms are established. Towering buildings started sprouting street after street, making Bonifacio Global City a highly urbanized district in Metro Manila.

One of the many companies that started hampering down BGC is the F1 Hotel Manila — the very first hotel in the district. Under its former name, it became a home for many tourists and the locals alike. Living up to its vision statement “To be the home of happy experiences”, F1 Hotel Manila is now a staycation haven composed of guest rooms, residential spaces, function rooms, wellness and fitness centers, executive lounge, and the all-popular, F All Day Dining Restaurant.

Urban Food, Kapampangan Chef

It wouldn’t be surprising that the dishes are more than up to par because the executive chef hails from one of Philippines’ culinary centers — Pampanga. After several years of travelling all over Europe and discovering the secrets and art of cooking, Chef Sau del Rosario found his way again to share his delectable recipes to his fellow Filipinos. This year to date, he is F1 Hotel Manila’s icon of great food creations.

It’s not new that next to hotel accommodations, guests root for the food quality that’s why Chef Sau makes sure that every dish, be it international, is being prepared perfectly with the slightest hint of Filipino cuisine. Each day is a new challenge, new set of dishes from appetizers to desserts to prepare, but the dedication is ever the same — always top-notch.

The A la Carte — Personal, Perfect, Pleasing

The buffet serves as the hotel’s temptation island for hungry guests, but Chef Sau’s creativity doesn’t stop there. An A la Carte menu has recently been launched to give the guests more sets of choices that are more of Chef Sau’s signature dishes.

The A la Carte lets anyone’s taste buds enjoy the different flavors that F1 Hotel Manila has to offer. For Chef Sau, it is a tasty and experimental journey around the world through every specialty dish he prepares. Not only the food are mouth-watering, but are also good for the health. F1 Hotel Manila also supports organic and healthy living that’s why the dishes are made from the freshest ingredients. The A la Carte menu also has some dishes with a tweak:

Kare-Kareng Bagnet

Kare-Kareng Bagnet – Pork belly has never been this good. Cooked with thick ground peanut sauce and a variety of veggies, this unique Kare-Kare will surely be a hit. This signature recipe comes from Chef Sau’s mom, a native of Pampanga.

Pasta with Assorted Mushroom – Journey to Italy through this healthy dish that’s cooked with organic mushrooms like truffles. This is definitely a plateful of elegance that fills your craving for Italian Cuisine.

Lamb Caldereta

Lamb Caldereta – The usually-cooked-with-goat-or-beef-meat dish is being redefined by using lamb meat instead of the conventional main ingredient. Considered as one of the Filipinos’ favorites, the lamb caldereta will let anyone have a taste of a special dish made even more special.

Chef Sau’s Pizza – F1 Hotel Manila’s pizza is not the usual Italian snack topped with pepperoni, salami, ham, or olives. Chef Sau’s original version consists of native Filipino ingredients like Longganisa, Kesong Puti and Itlog na Maalat.

Chicken Inasal – A recipe brought from Chef Sau’s Ilo-Ilo friends, this version of Chicken Inasal will definitely give anyone’s taste buds a different, tasty kick.

Watermelon Atsara – A side dish made special by using watermelon as the main ingredient instead of grated unripe papaya.

Sisig Foie Gras – An original Kapampangan dish with a tweak—having foie gras as the main ingredient instead of pork. It’s Europe meets Pampanga, international meets local; the kind of variety anyone would like to taste.

These are just some of the dishes listed on F1 Hotel Manila’s A la Carte menu. More dishes are featured, plus a nice selection of wine.
