Anthony Bourdain tells Anderson Cooper: I admire Filipinos' spirit, generosity

MANILA, Philippines — More than the food and festivities, Anthony Bourdain admires Filipinos for being spirited in the face of adversities and for being caring in the face of crisis.

Recently, Bourdain sat down with Anderson Cooper at New York City’s Mission Chinese restaurant to film a series of segments on Anderson Cooper 360° and to talk about Bourdain;s visit in the Philippines to shoot for his show "Parts Unknown."

At one point in the conversation, the rockstar chef shared that the segment shot in the Philippines is not just about showcasing their love for food but a show that reflects the Filipinos love for everything—music,singing and other fellowmen.

"The show is about Filipinos propensity for looking after other people and that uniquely... instinct love for music and singing and food and caring for others," explained Bourdain.

Responding to Bourdain, Cooper said, "I was so struck by the pride of people there and their strength in the face of being abandoned by their government."

During Burdain's visit to the Philippines, he was joined by people he met on the streets of Manila. Some of them invited him for an intimate dinner in their own abode while others shared some drinks and conversations with him in some of Manila's famous street food destinations.

Bourdain was able to put his tongue on the famous Filipino dish "sisig," or chopped-up pig face, as the chef calls it.

"Pork is king. They (Filipinos) love whole roasted pig. They do a dish which is called sisig, which you would probably hate, which is sizzling chopped up sisig with a raw egg," Bourdain explains to the anchor known for being a picky eater.

Cooper, seemingly perplexed, asked Bourdain why they would choose to eat the face if there are some parts you can eat, to which the chef explained that it is because of the texture, cartilage and fat that make it delicious and rich.

Asked why Bourdain chose to visit Philippines again despite having already gone there, Bourdain said: "Philippines... very proud... very proud people, there are a lot of Filipinos in this country (USA) and they apparently like my shows."

The seventh season of “Anthony Bourdain: Parts Unknown” was aired in the Philippines on April 24. This is not the first time Bourdain featured the Philippines. In 2009, he visited Manila, Cebu and Pampanga for the fifth season of his defunct show "No Reservations."
