The letter “Ñ” is part of the Spanish alphabet. Other organizations have extended this identity to include Hispanic heritage. In America, it is used to label a first-generation American-born Latino. 

Here in the Cebu, it’s the name of a Spanish restaurant at Crimson Hotel and Spa.

Conceptualized by chef Jose Luis “Chele” Gonzalez, Enye serves authentic and contemporary Spanish cuisine focused on the different diversities of food in Spain, while  providing flavor profiles that are very familiar to the palate. 

It is worth the trip (even from out-of-town) to Crimson Resort and Spa, Mactan Cebu specially those who are craving for an authentic and creative Spanish gastronomic experience.

 

 

 

 

The menu is divided into traditional and modern based on Chele’s favorite tapas and comfort food. Popular dishes include salpicon de Marisco, which is marinated seafood in pepper and onion vinaigrette, Rabo al Vino Tinto, slow-cooked oxtail in red wine and potatoes, and a local favorite — the paella.

Diverting from the classic Spanish dishes are a selection of  modern  fusion such as Carpacciode Wagyu with Parmesan ice cream and pine nuts and ensalada de jamon y foie.

Amiable general manager Didier Belmonte enthused that with this new dining experience, Crimson Resort and Spa hopes to add to Cebu’s gleaming culinary scene providing  another fantastic restaurant that will increase standards in gustatory appreciation and state-of-the-art facilities.

The restaurant features a wine cellar, charcuterie room and show kitchen allowing guests to enjoy the experience from preparation to table service. The design reflects a beautifully balanced blending  of the classic and the contemporary with a dominant masculine feel. Although most elements are contemporary, there is a notable harmony between the modern approach to the dining environment and a very subtle affirmation to the past.
