‘La dolce vita rocks Cebu
The Chaine Des Rotisseurs, which was founded in Paris in 1950, is the oldest and largest international food and wine society in the world. The mission of this gastronomic society is to promote culinary arts, exceptional skills and creativity in the essentials of fine dining, while widening its focus to include table art.
Recently, members of the Chaine Des Rotisseurs Cebu chapter, led by the Lhuillier team, Baille Delegue Michel and Bailli Amparito, enjoyed a five-course dinner with the theme, “La Dolce Vita,” inspired by the film directed by Federico Felini, at the Waterfront Cebu City Hotel.
The men came dressed in black while the ladies wore an all-white ensemble. Adding to the ambience during cocktails was an instrumental group playing light jazz music from the La Dolce Vita soundtrack. After the delectable stuzzichino (pass around), the curtains were drawn to reveal a dramatic and beautifully arranged dinning setting.
A generous spread of antipasto such as Italian cold cuts, olives, breads, pickles and vegetables delighted guests.
The meal created by Italaian corporate executive chef Giovanni Sias consisted of clam soup with grapes, tomatoes and Sardinian Fregula followed by homemade tagliatelle in a Parmesan wheel with black summer truffle. A Campari Granita sorbet preceded the main course of pan-fried tenderloin with Marsala wine sauce, and bacon onion potato cake with pancetta chips. The meal was capped by Amaretto Chocolate Mousse, fresh Italian meringue with chantilly cream, followed by coffee or tea. Each course was paired with carefully selected champagnes, red and white wines. After the meal, guests gravitated to the cheese station to savor the distinctive textures and flavors of a wide variety of cheeses — from creamy and delicate to sharp and nutty, which are nothing short of extraordinary.
Cebuana soprano Ozarzuri Vidal sang a variety of classical and contemporary pieces.
General manager Anders Hallden and staff were presented with their well-deserved certificates.
