LOOK: Americans line up for gluten-free halo-halo laced with energy drink

MANILA, Philippines — A Filipino-made halo-halo has reached America's most famous annual music and arts festival -— Coachella.

All thanks to chef Isa Fabro of Unit 120, a group of US-based chefs experimenting with Filipino food. While the usual Filipino halo-halo is made of shaved ice, bananas, beans, milk, pounded dried rice, leche flan, and coconut gelatin, Fabro's version is gluten-free and vegan.

To fully experiment with flavors, she adds fruity pebbles, pineapple, soft tofu, coconut milk, and Red Bull to it.

According to LA Mag, Fabro's knack of creating Filipino delicacies with a twist was inspired by her first and most recent visit in the Philippines.

“I was growing up eating all the Filipino foods, but when I was on this trip, I got to taste them the real way,” she told LA Mag. “I was able to eat dishes [and I’d think] ‘Oh, I know what that is,’ and then I tasted them, and I’m like, ‘What is this?' Not to say that what I was eating before was bad, but now I can say I’ve had the real thing.”
