How to cook 'Roast Chicken à la Erwan Heussaff'

MANILA, Philippines – Intimate family conversations enjoyed alongside appetizing menu served on the table is probably the reason why Filipinos are always looking forward to Noche Buena. And while serving lechon on holidays leaves everyone with a full tummy, serving some healthy alternatives can be a great idea too. Take for example a roast chicken.

To make sure that you are serving not just any other roast chicken on the most special day of the year, Erwan Heussaff, TLC Southeast Asia’s brand ambassador shared some tips on how to cook one of his favorite easy-to-cook dishes.

“I like roast chicken.  A lot of people think it’s hard but I think it’s actually really quite easy.  It’s just making sure that all the steps are done properly,” said the the newest face on TLC.

So how do you cook roast chicken à la Erwan Heussaff? Here are some of his tips and techniques to make that perfect roast.

“So usually what I do is I brine it so that I make sure at least it keeps, you know, it stays very moist.  And then I air dry it in the fridge over night with a little bit of salt so then that way I make sure that the skin is nice and taut and tight, and then when we cook it, it will stay nice and crispy.  And then you can just basically put it in the oven for about one hour at a set temperature and it’s done. And it’s really easy. Great source of protein, really healthy and it’s just very tasty. So that’s why – that’s kind of my go-to.”

Proving to be one of the most sought after restauranteur and food blogger, Erwan has amassed a legion of fans, who were given the chance to meet him in the flesh and watch him demonstrate some easy-to-do recipes on the first ever TLC Festival in the Philippines held in November 21 at the Bonifacio Global City grounds.

And just in case you missed Erwan and his demos, you can still catch up by watching Food Fix with Erwan Heussaff. As TLC Southeast Asia’s brand ambassador, Erwan is featured in a series of four vignettes. The vignettes show Erwan whipping up some of his delicious yet guilt-free dishes such as “Crab Fat Pasta with Scallops,” “Peas and Spaghetti” and “Thai Style Marinated Lollipop Chicken with Peanut Sambal Sauce.”

According to Erwan, Food Fix with Erwan Heussaff  aims to “show people that cooking is really simple and that people shouldn’t be scared of doing it.”

“A lot of people I know, when they cook at home, they just cook really simple stuff like vegetables and steak because they can’t be bothered to do so – they think it’s really complicated,” explains Erwan.

At Food Fix, Erwan puts a spin to the most basic Asian dishes without consuming too much time and not having to have too much ingredients on hand.
