Fusion Flavors

SM City Cebu, together with the Department of Tourism, recently launched Fusion Flavors at the Northwing Atrium in celebration of Madrid Fusion Manila.

The event featured Café Laguna's Chef Raki Urbina, in collaboration with Cebu's culinary icon Madame Teresin Mendezona.

Chef Raki Urbina prepared Spanish and Filipino dishes for select guests and culinary students. Spanish dishes included white gazpacho, red gazpacho, fabada with jamon, pimientos rellenos de bacalao, angulas, albondigas, pan de bara, ricotta crostini, champiñones rellenos, gambas ajillo with mini pandesal, and cassava ala Teresin. Filipino dishes were pancit palabok rolls, arrozcaldo shots with tokwa't baboy in skewers, lumpia hubad in crispy rice cups, balot broth and penoy, kare-kare sushi, leche puto, leche-ube-kutsinta, maja blanca scones, and biko-mango, paired with melon na palamig.

Teresin Mendezona, also a renowned event stylist, made sure everything was perfect - from the food presentation and décor to the quality of service and the ambience. A pergola, draped with real grapes, where the food was served and prepared, was a unique touch.

Madrid Fusion Manila is the first and only Asian edition of Madrid Fusion, the most important international gastronomy congress in the world. Celebrated annually in Madrid since 2003, the event brings together the most acclaimed avant-garde chefs from across the globe. On its first year, the theme of the congress was "The Philippines and Spain: A 300-year Gastronomic Journey."

Madrid Fusion Manila was held in SMX Convention Center with the theme "The Manila Galleon: East Meets West." SM Supermalls has also brought a taste of the grand gastronomic experience closer to its customers with "Fusion Flavors" at 24 participating SM malls nationwide.

"Fusion Flavors" aims to make the SM malls a destination for families and the rest of the community. "SM, through its partnership with Madrid Fusion Manila, the DOT, and Flavors of the Philippines, is simply fulfilling its mission to bring families and friends together in one fun place through the enjoyment of everything flavorful," SM Supermalls SVP Steven Tan shared.
